Title: Radio Pudding

1cFlour
1/3cSugar
1 1/2tsBaking powder
1/2tsBaking soda
1/4tsSalt
1 1/2cDiced rhubarb
1/4cRaisins
1/2cMilk
1 Egg
1/2tsVanilla
  Sauce
1cBoiling water
1/4cBrown sugar, packed
1/4cButter
1tbLemon juice
1tsGrated lemon rind
1pnNutmeg

Pudding: In bowl, mix together flour, sugar, baking powder, baking soda and salt. Stir in rhubarb and raisins. In separate bowl, beat together milk, egg and vanilla just enough to combine, folk into flour mixture. Turn batter into greased 8 inch square baking dish.

Sauce: Into boiling water stir brown sugar and butter until sugar dissolves and butter melts. Add lemon rind, juice and nutmeg. Pour gently over batter. DO NOT STIR INTO BATTER. Bake 350F for 30 - 35 minutes or until pudding is golden brown on top and centre is firm to the touch.

This recipe is an adaptation of a Nova Scotian recipe made popular in a 1940's radio show. The pudding rises and floats to the surface on a layer of lemony-sweet sauce. ~-- * OFFLINE 1.58
